This is our take on Caerphilly, the traditional Welsh cheese. It is hard and slightly flaky, with a sharp, nutty flavor. Not dissimilar from an aged cheddar.

A seasonally available washed-rind goats’ cheese. Quaker hill was born by accident when several wheels of our caerphilly were inoculated with native B. Linens cultures that blew in on the wind. It has become a fast favorite for its ripe, pungent flavor and decadently creamy texture.
- Recommended uses: Savor alone or with a simple cracker.
